Jacoulot, located in Romanèche-Thorins in the south of France’s Burgundy region, is a haute couture distillery that has been transforming the region’s signature pinot noir grapes into rich, complex brandies since 1891. The Jacoulot trademark is a combination of aromatic complexity, finesse, and elegance achieved by distilling and aging hyper-local fruit spirits in their historic cellar, notable for its consistent humidity and cool temperature. Jacoulot rose to fame in the bouchons of Lyon, becoming synonymous with the region’s signature grape-based eau de vie: their iconic Marc de Bourgogne.
Philippe Vançon and Anne Pascal, the current owners and creative team behind Jacoulot, have taken this historic house to new heights with an intense focus on quality, utilizing the bounty of local ingredients native to the Burgundy and Rhône regions. They are true craftspeople, meticulous in their production methods and thoughtful innovations, consistently delivering exquisite, handcrafted brandies from one of the great viticultural and gastronomic regions of the world.
Production: Marc de Bourgogne is single-distilled from the skins and pips of pinot noir, referred to as marc or pomace. Jacoulot takes great care to use only destemmed fruit (extra egrappé), giving the marc notes of great Burgundy and taming the fiery nature common to lesser brandies. Jacoulot distills its marc between November and March each year using a mobile alembic still to match the natural rhythms of the harvest and the winemaking process.
Through their relationship with De Maison Selections and our extended family of producers, Jacoulot was able to acquire two well-used sherry butts from Sanlúcar de Barrameda’s Bodegas La Cigarrera, which was incidentally founded the same year as Jacoulot. After decades of service in the amontillado solera in Sanlúcar’s humid, coastal Barrio Bajo, the empty barrels were brought 1700km inland northeast to Jacoulot’s cellar. There, they were filled with marc de bourgogne that had already aged for an impressive 24 years in French oak barrels (228L barriques and 600-700L demi-muids), spending an additional three years of extended finishing in these sherry casks. This unique bottling offers a rare opportunity to savor the connection between two of Europe’s most esteemed independent historic wine & spirits producers, representing two legendary regions.
Flavor Profile: Jacoulot’s Marc de Bourgogne is already aromatically rich and potent, with earthy mushroom notes, butterscotch, stone fruit, golden raisins, sandalwood, and cinnamon. The addition of three years in amontillado casks supercharges the aroma with profound and very compatible sherry notes. This brandy displays a prismatic sensory range of what two iconic grapes—pinot noir and palomino fino—can develop into with patience and intentionality. The palate is lush and chewy, with a long, elegant, bittersweet finish, mellowed by the long aging duration.
