Hijo de Rubentis (Son of Rubentis) is a méthode traditionnelle sparkling rosé made from old-vine hondarrabi beltza grapes. Ameztoi’s inspiration to use his area’s signature low alcohol and refreshing acidity as an ally to craft exceptional bottle-fermented sparkling wines has resulted in new possibilities for the region. It is exclusively produced from Ameztoi’s oldest hondarrabi beltza vineyard, planted high on the slopes rising above Getaria, an ancient Basque fishing village on Spain’s rugged northern coast. Released once a year in small quantities after an extended period of lees-aging in bottle, Hijo Rubentis rosé is built to improve in bottle, displaying the incredible potential of méthode traditionnelle sparkling wines in the Getariako Txakolina region. Available in 750ml and 1.5L formats.
Vintage – 2016 was an excellent quality vintage, with modest alcohol, full ripeness, relatively light tannins, good aromatic range, and no bitterness. A mild winter with sufficient rain was followed by a spring with mild temperatures until the weather turned hot in late August and early September.
Vinification – Grapes are carefully handpicked ten days early to ensure lower base alcohol. After a direct pressing in an inert bladder press, alcoholic fermentation happens by indigenous yeasts in temperature-controlled stainless steel vats. Secondary fermentation takes place in bottle with selected autochthonous yeasts and grape must, achieving 12% abv and 4 g/l of naturally occurring sugars.
