Particules Crayeuses is Waris-Larmandier’s flagship Blanc de Blancs cuvée, sourced from the estate’s biodynamically farmed, old-vine chardonnay plots in the Grand Cru villages of Chouilly, Cramant, Avize, Oger, and Le Mesnil-sur-Oger in the Côte des Blancs. The Waris-Larmandier family utilizes natural and regenerative agricultural practices. Particules Crayeuses is certified organic and biodynamic Champagne. The Waris-Larmandier style is terroir-focused, understated, structured, and ultra-elegant.
Vinification
Grapes are hand-harvested and crushed in a traditional 4000 kg vertical wooden basket press; only free-run juice is used for the primary fermentation. Particules Crayeuses is barrel-fermented with native yeasts in 600L demi-muid Burgundy barrels and Avize Champagne barrels. Malolactic fermentation is spontaneous following alcoholic fermentation. It is a 2017 vintage blend with the addition of 20% of wine from a solera started in the 2013 vintage. The base wines are aged 6-18 months before secondary fermentation in bottle, followed by 24-36 months of lees aging, sur lattes. Disgorgements are done according to the lunar cycle—dosage 4g/L.
