Contrée Noire is the blanc de noirs partner to the blanc de blancs Aube Saline. Vines planted in 1962 in the Val Frion vineyard, which features both Kimmeridgian and Portlandian limestone & clay soils, provide the signature structure and balance of the Brocard wines. Contrée Noire features an elegant nose of fresh brioche and notes of yellow stone fruits, white cherry, fig and apple blossom, while the harmonious, finely-balanced palate offers a mid-weight mousse and impressive, round length.
Vinification
Grapes are manually harvested and gently pressed in a vertical Coquard press. Only the heart, or the cœur de cuvée, of the first pressing is utilized. The grapes are fermentated spontaneously with native yeasts in stainless steel, including MLF. After secondary fermentation in bottle, the wine ages on its lees for 4-6 years before disgorgement, and is bottled non-dosage (brut nature), unfiltered and without cold-stabilization.
