Champagne Pierre Brocard ‘Absimilis’ Blanc de Blancs Brut Nature 2019

Absimilis is a rare 100% pinot blanc champagne from the La Lemblée vineyard, planted in 1975 in clay-heavy soils. Extended skin-maceration gives this non-traditional wine surprising mango, papaya, and pineapple notes, seasoned by sea foam. With a structured and resonant palate, thanks to long aging on the less, this non-dosage champagne has the versatility and relative weight to become an exceptional pairing for a wide array of dishes.

Grapes are manually harvested and gently pressed in a vertical Coquard press. Only the heart, or the cœur de cuvée, of the first pressing is utilized. The grapes (50% destemmed & 50% whole bunches) undergo a 7-day skin maceration in concrete tank. Fermentation is spontaneous with native yeasts in stainless steel, including MLF. After secondary fermentation in bottle, the wine ages on its lees for 48-72 months before disgorgement, and is bottled non-dosage (brut nature), unfiltered and without cold-stabilization.
