Ca’n Verdura Viticultores is a groundbreaking garage-winery from Tomeu Llabrés, working in self-described “viticultura en miniatura”, focused on the search and recovery of historic Mallorquín vineyards and grape varieties. In 2012 he founded his micro-winery in a former auto garage at the center of the ancient village of Binissalem, located in the north-central portion of Mallorca. Through a steadfast focus on saving old vineyards and indigenous grape varieties, Tomeu has demonstrated incredible potential of the island, creating some of the Balearic region’s most ground-breaking wines.
Tomeu Llabrés is a true viticultor, practicing minimal intervention winemaking and low impact viticulture by leaving the cover crop during the cold season and encouraging biodiversity within his parcels and environment through polyculture. His wines are handmade, without additions, subtractions, or corrections. His primary objective with each cuvée is maximum respect and transparency for his terroir and culture, as well as for the customers who enjoy his wine.
Ca Ses Rosetes is the nickname of Tomeu’s mother’s side of the family. After bottling a few vintages of a single-vineyard white wine under that name featuring the indigenous giró ros grape, he’s now doing the same for the red callet grape. Callet is a dark-skinned grape that tends to deliver light- to medium-bodied wines with fresh acidity, lower alcohol, and floral, red berry aromatics. It’s an ideal partner for the call vermell soils here in Santa Maria de Camí, approximately 10km southwest of Tomeu’s winery in Binissalem. 0.7ha of callet were planted in the Plà de Buc vineyard 30 years ago, where restrained viticulture is practiced to let the ambient microorganisms, beneficial insects, and cohabitating plants contribute to a healthy vineyard.
The call vermell soils are of a red, iron-rich clay and limestone, boasting excellent water retention, which is important to avoiding hydric stress and producing elegant wines in the typically arid Mallorca climate. Importantly, this vineyard receives excellent ventilation from the Levante winds blow from NE to SW off Menorca across the island, cooling the vineyard and providing natural protection from disease.
Vinification
After manual harvest in small boxes and manual sorting, alcoholic fermentation occurs with native yeasts in temperature controlled stainless steel tanks at 21°C and large, used French foudres, with a 10-day maceration. The wine rests in 500L used French barrels for three months. No sulfites are added during fermentation, with only a small amount added just before bottling, and only if necessary to ensure stability. Just 3500 bottles were filled in this vintage.
