A New Generation in Binissalem
Just as the name of Tomeu’s flagship wine—Supernova—would imply, it’s fair to say that the new generation of Mallorcan wine producers is making an impact.
With over fourteen million visitors each year, Mallorca has slowly abandoned its agricultural roots in favor of the tourism industry. Indigenous grape varieties have been uprooted and replaced with international plantings at investor-owned wineries. Vineyard land costs have soared, and luxury homes now stand in the place of old vineyards. The traditional polyculture that once defined the landscape was paved over to make room for tennis courts.
However, all is not lost. The seeds of Mallorca’s rebirth lie within a new generation of winemakers, farmers, and chefs who are diligently cataloging, recuperating, replanting, and exalting thousands of years of pre-tourism agricultural history.
Like a supernova, Mallorca’s modern wine and culinary scene is rapidly expanding, reviving sustainable and culturally grounded traditions and shaping the island’s future.
History & Origins
Rooted in Polyculture
In 2012, Tomeu Llabrés founded his micro-winery in a former auto garage at the center of the village of Binissalem. Six generations of his ancestors have tended vineyards alongside apricot, almond, and olive trees. This traditional Mallorcan polyculture remains central to his philosophy.
Through a steadfast focus on the native mantonegro grape, Tomeu has shown that this ancient grape has remarkable potential, producing groundbreaking wines for the Balearic region. Recent tastings have compared mantonegro’s profile to Sicily’s nerello mascalese, an encouraging parallel given both islands’ renaissance of native varieties.

Tomeu Llabrés, Viticultor

After a childhood on the island of Mallorca, Tomeu studied oenology in Tarragona. He later gained practical experience under Álvaro Palacios in Priorat, and upon returning to Mallorca, worked with acclaimed estates including 4 Kilos, Anima Negra, and Son Campaner. At night, he explored the ideas that would eventually become Ca’n Verdura.
Today, he practices low-impact viticulture and minimal-intervention winemaking. He maintains cover crops during the cool season and actively encourages biodiversity across his parcels through polyculture. His wines are handmade, without additions, subtractions, or corrections, and an uncompromising commitment to terroir transparency.
The Vineyards & Land
Old Vines, Indigenous Grapes & Traditional Training
Ca’n Verdura focuses on old-vine vineyards planted en vaso, or goblet-style, centered around the five historic villages of Binissalem. He works predominantly with indigenous varieties: mantonegro and callet for reds, and moll (prensal blanc), mantonegro cabellis, and giró ros for whites.
The soils of Binissalem are cal vermell: red, iron-rich clay-limestone with small to medium-sized galets. These soils are integral to the character of the wines. Only native yeasts are used for fermentation, and the vineyards are farmed without chemical treatments. The Levante winds, blowing across Mallorca from northeast to southwest, provide crucial cooling and natural aeration for disease prevention.

The Winemaking Philosophy
Minimal Intervention, Maximum Identity

Tomeu’s primary objective is to express his island’s terroir with maximum honesty, and he achieves this through minimal-intervention methods aligned with the traditions of Mallorcan agriculture.
Ca’n Verdura Red is an easy-drinking, Mediterranean-style red made mostly from mantonegro, with small amounts of other grapes adjusted each year. It’s food-friendly and approachable, and works especially well with a slight chill.
The Supernova series comes from Tomeu’s best vineyard plots and represents a step up in focus and intensity. Supernova Blanc is a white wine from top moll (prensal blanc) vineyards, while Supernova Rosat and Supernova Negre are made from his best mantonegro sites. Production is extremely limited, and these wines typically sell out every vintage.
In exceptional years, Tomeu also releases micro-production, single-vineyard wines made in very small quantities. Ca’n Xicatlà is a distinctive white wine from a tiny, old vineyard planted to mantonegro cabellis, a rare mutation of mantonegro.. Son Agulló is an elegant red from a very small parcel of old mantonegro vines. Ca Ses Rosetes is a newer white wine sourced from a single vineyard planted to giró ros.
Each of his wines showcases the genetic diversity of old vines and the technicolor potential of Mallorca’s native varieties.
