Dits-Lieux is an assemblage of 75% pinot noir, 20% pinot blanc, and 5% chardonnay grapes from 10 estate vineyards. The harvest base is 2023 (70%), with the remainder from a multi-vintage vin de réserve solera, which was started by Thibaud’s father, Pierre, in 1991. 30% of the new vintage is added and withdrawn each year. Cuvée Dits-Lieux is dominated by the red fruit of pinot noir, with a fresh and harmonious palate, lightly framed with notes of brioche. It is a vinous and substantial Champagne, without weightiness, making it ideal for enjoying solo or with food.
Vinification
Grapes are manually harvested and gently pressed in a vertical Coquard press. Only the heart, or the cœur de cuvée, of the first pressing is utilized. The grapes are fermentated spontaneously with native yeasts in 90% stainless steel and 10% French oak barrel, including MLF. After secondary fermentation in bottle, the wine ages on its lees for 18-24 months before disgorgement, and is bottled non-dosage (brut nature), unfiltered and without cold-stabilization.
