Destilerías Acha Vino Vermouth Rojo

Acha’s classically Basque vermouths are their signature offering, syncing beautifully with the broader vermouth tradition enjoyed across Spain. Their Vino Vermouth Rojo is a revival of Manuel Acha’s traditional recipe, with local botanicals including licorice, wormwood, gentian, cherry, and wild herbs. These botanicals are macerated in aguardiente, then blended into a Txakoli wine base of 80% hondarrabi zuri and 20% hondarrabi beltza grapes. This rare instance of a vermouth producer using red wine in a sweet vermouth blend is thanks to the thin skins, high acid, and delicate nature of hondarrabi beltza. The signature flavor, balance and structure of the Acha Rojo is exemplified by the Vino Vermouth name. These quality base wines are sourced from trusted partners in the Basque Country, which farm 8ha of vineyards that are currently in organic conversion.

Sour cherry jam, plum skin, dried Mission figs, herbs (thyme, sage, rosemary), sweet orange, balanced, earthy bitterness and acidity. The judicious sweetening with caramelized cane sugar in Acha Rojo makes this a lovely aperitif vermouth in the Spanish tradition; but it can play just as seamlessly in both modern and classic cocktails in place of a Torino-style sweet vermouth, offering bright and savory notes.

Acha Vino Vermouth Rojo is available in a 20L, recyclable UniKeg with a standard sankey coupler. We recommend using nitrogen gas for taps, but please consult your keg tech.
