Acha’s classically Basque vermouths are their signature offering, syncing beautifully with the broader vermouth tradition enjoyed across Spain. Their Vino Vermouth Blanco is a revival of Manuel Acha’s traditional recipe, with local botanicals including gentian, wormwood, bitter orange, and wild herbs. These botanicals are macerated in aguardiente, then blended into a hondarrabi zuri Txakoli wine base, the quality of which is exemplified by the Vino Vermouth name. These base wines are sourced from trusted partners in the Basque Country, which farm 8ha of vineyards that are currently in organic conversion.
Flavor Profile & Usage
Floral (fresh honeysuckle and elderflower), herbal (thyme, sage, rosemary), and sweet citrus (lemon and tangerine) notes, with balanced green, herbal bitterness. The round and fruity finish is deliciously nostalgic. Acha Blanco has a delicate sweetness balanced by racy acidity and firm bitterness – making it a lovely aperitif vermouth in the Spanish tradition. It can play just as seamlessly in both modern and classic cocktails in place of a blanc vermouth or quinquina, offering subtle complexity.
