Juanvi is a small-scale, artisan winery established in 2008 in the town of Rubielos de Mora in the Sierra de Gúdar-Javalambre mountains at 1000m, surrounded by beautiful peaks and scenic vistas in every direction. The region has a strong continental climate, with a wide daily variation of temperatures, from very cold at night to very hot during the day. 

Quercus is made from the organically-farmed garnacha from the Pago Alto and La Loma vineyards near the village of Rubielos de Mora at 980m, planted in shallow, ferric-clay colluvium, as well as the indigenous miguel de arcos variety from Báguena, planted in shallow clay soil with quartzites at 1000m. Vines are between 15 and 50 years old. 

Quercus is a blend of the well-known garnacha grape variety, which is thought to be indigenous to the Aragón region, as well as the lesser-known miguel de arcos grape, which Juanvi is passionate about saving and featuring in their wines. Miguel de arcos is an indigenous grape to Aragón that, when compared to syrah, is larger-berried, with a lower skin-to-juice ratio and a lighter, fruitier frame that is less structured than syrah. It is excellent when blended with garnacha or syrah, as it lends an incredible light and juicy profile to the backbone provided by the two more well-known noble grapes.

Vinification – Whole bunches are hand-harvested, then whole grapes are destemmed but not crushed, and grapes undergo spontaneous fermentation with native yeasts with a three-week maceration and light punch-downs (without breaking the skins) for the delicate extraction of tannins and color in stainless steel tanks of 2000 and 3000 liters. Following pressing, the wine rests for six months in used two and three-year-old 400L French oak barrels. After aging in barrels, it is transferred to concrete tanks where it ages for a further three months. Juanvi wines are bottled without stabilization, clarification, or filtration.
