Aged in partially-filled barrels, fully exposed to oxygen, oloroso begins with fortification to the degree that a layer of flor is unable to develop. As a result, over the course of its time in the solera, this wine grows more concentrated, taking on a darker hue while developing complexity and a deep savoriness, like balsamic, red meat, and roasted walnuts—and still bone dry.
