The Silver-Indigo is created using a special yeast originally developed by Toji Tanaka more than 20 years ago, revived specifically for this expression. This bottling explores the contrast between delicate aromatics and profound umami. Gleaming with a subtle blue-green tinge, Indigo opens with an inviting nose of peach candy and white flowers. Light and crisp on the palate, it features a luscious mid-palate sweetness filled with notes of crème anglaise and baked lemon, all anchored by a striking granitic minerality. A textural lift carries the bright fruit into a soft finishing kiss of sweetness.
