Cuvée Composition was made from the challenging 2021 vintage in Champagne and is a testament to Margot’s meticulous farming and winemaking. Composition is an assemblage of the best parts of her 35-year-old pinot noir and chardonnay plots from Bas Vigny, Gourdaines, and Sablonnières, near her village of Beaunay in the Val du Petit Morin. The results are nothing short of outstanding, with Composition featuring precise minerality and fresh fruit on the nose, and an open and energetic palate that makes this an incredible Champagne to drink now and over the coming years.
Vinification
After a manual harvest on September 18, 2021, grapes were taken to a state-of-the-art press house located just five minutes from her vineyards, where they were pressed in a Coquard press with an inclined plate (the latest generation of Coquard). Only the heart, or the coeur de cuvée, of the first pressing is utilized. Primary fermentation occurs in used (5-7 years) 228L Burgundy oak barrels, without fining, filtration, or cold stabilization. Malolactic fermentation is natural and spontaneous. Composition was aged for ten months in oak barrels and aged 17 months in bottle before disgorgement.
