The Mencía de Valtuille is an assemblage from some of the best old-vines parcels of the estate.
Vinification 55% of the grapes are destemmed. The grapes are foot-crushed, and the wine is fermented with indigenous yeast in large, open-top foudres for 30 days with manual punch-downs twice a day. No pumps are used at the winery, with gentle racking done by gravity. Aging on fine lees in over 7-year-old French oak barrels (225L and 300L) for 11 months.
Tasting Notes The brooding nose is dominated by wild balsamic strawberries and blackberries, black pepper, wild mountain herbs, and stony minerality. The palate is medium-plus bodied and texturally compelling, offering incredible balance and a very long finish which begs for grilled game meats and roasted fall vegetables.
