An assemblage from some of the best old-vines parcels of the estate.

Vinification 55% destemmed. Fermentation with indigenous yeast in open-top barrels for 30 days with manual punch-downs twice a day. Ageing on fine lees in 7+ year-old French oak barrels (225L and 300L) for 11 months. Not topped off.
