Vin des Fossiles Pinot Gris Les Grandes Plantées

A mutation of Pinot Noir, this grape is also known locally as Pinot Beurot, and was once more widely planted in Burgundy. In Jean-Claude's version, the wine sees no wood and does not go through malolactic fermentation, in order to show off the fresh, fruity, and nervy characteristics of the variety.

Vinification Fermented in stainless steel without any malolactic fermentation.

Tasting Notes Peach, white flowers, and some wood spice on the nose. In the mouth it is warm and ripe, but structure is provided by a solid acidic backbone.
