Pale yellow. Vibrant, mineral-tinged apple, Meyer lemon and floral aromas, along with a suggestion of beeswax. Juicy and precise on the palate, conveying excellent clarity and thrust to its ripe citrus and orchard fruit flavors. Shows repeating mineral and floral notes on the tense, linear, impressively persistent finish.

($20) (70% hondarribi zuri, 20% mune mahatsa, a.k.a. sauvignon blanc and 10% txori mahatsa, a.k.a. folle blanche): Pale yellow. Displays incisive aromas and flavors of fresh citrus fruits, quinine and chalky minerals, along with a subtle floral nuance and a touch of ginger. Dry and racy, showing no excess fat and finishing with strong mineral cut. This would be a great wine to serve with raw shellfish or sashimi of lighter fish, like fluke.

($17) Pale, green-tinged yellow. High-pitched citrus fruit and floral scents, with a smoky mineral overtone. Dry, nervy and focused, offering bitter lemon/lime and quince flavors and a hint of honeysuckle. Closes zesty and long, with lingering spiciness and very good clarity.
